Taco Salad

    Recipe Description

    Taco Salad from Chasen FitnessServings:  Makes 6 Servings

    Ingredients

    • 4 Tbs Lime Juice
    • 6 tsp Minced Garlic, Divided
    • 3 tsp Cumin, Divided
    • 2/3 cup Extra Virgin Olive Oil
    • 2 Tbs Avocado Oil
    • 2 pounds 90% Grass-Fed Ground Beef
    • 1 Tb Chili Powder
    • 2 Tb Tomato Paste
    • 1 cup Water
    • 2 hearts Romaine Lettuce
    • 2 Tomatoes, Coarse Chopped
    • 1/4 cup Chopped Cilantro

    Directions

    ==DRESSING ==
    Combine lime juice, 2 teaspoons minced garlic, 1 teaspoon cumin, 2/3 cup extra virgin olive oil, and salt to taste in small bowl. Set aside.

    == TACO ==
    Heat avocado oil in 12-inch skillet over medium heat until shimmering, Stir in beef and cook, stirring often, until lightly browned, 5 minutes. Add remaining 4 teaspoons garlic, remaining 2 teaspoons cumin, and chili powder and cook until fragrant. Stir in tomato paste and water, and simmer about 4 minutes until thickened. Season with salt to taste and set aside to cool slightly.

    == SALAD ==
    Toss lettuce and tomatoes with dressing. Portion beef on top of salad and sprinkle with cilantro.

    == ADD-ON’S ==
    May add shredded yellow cheese, avocados, sour cream and jalepenos.
